BEER NAME?

Mosaic DDH IPA

WHERE’S IT FROM?

Bracket Brewing

WHAT’S SO SPECIAL ABOUT IT?

Independent nanobrewery Bracket Brewing doesn’t believe in resting on its laurels.

The father-and-son operation out of Marrickville in Sydney favour new releases each month over a core range, delivering powerful IPAs — alongside a few lagers, pilsners or porters — in 440mL tallboy tinnies.

This month’s range includes a West Coast IPA, Black IPA, DIPA and Coconut Imperial Stout with a whopping 12 per cent ABV, though on test this week is the brewer’s Mosaic DDH IPA.

When you crack the tallboy, the first thing you will notice is the vibrant tropical fruit flavour smell. Because it is double dry hopped, the aromatics are amplified, with papaya and sweet guava up front, with a touch of red berry.

It pours a hazy pale straw colour, with a frothy, meringue-like head that leaves behind a significant lacing.

Take a sip and the hop profile mirrors the aroma, with a punch of juicy papaya and guava, berry and mild citrus zest, balanced by a hint of earthy pine flavour and low-intensity bitterness to stop it being too sweet.

Bracket says the key to its flavours is how the hops interact with their house yeast, emphasising Mosaic’s juicy characteristics.

It also says the real star is the texture, with the fermentation process producing a creamy mouthfeel.

It is indeed velvety smooth, lingering on the tongue from start to finish but avoiding a heavy finish.

SHOULD I SHARE IT?

With an ABV of 6.9 per cent, this is ideal for sipping slowly or sharing with friends.

WHAT’S THE DAMAGE?

It’s a hefty beer with a hefty price of $19.50 each.
