A trio of Western Australia’s culinary talents will come together on Rottnest Island on Saturday, August 15, for a one-off long lunch celebrating the State’s most prized winter ingredient: fresh black truffle.

Hosted at Sunsets Bar & Dining within The Lodge Wadjemup, the collaborative event will see executive chef Tom Ferne open his kitchen to Millbrook Winery’s Guy Jeffreys and H&C Urban Winery’s Gord Kahle. Together, they will present a four-course menu showcasing WA’s coveted “black gold”.

The menu features octopus croquette, toasted focaccia with wagyu bresaola, swordfish ballotine, dry-aged duck breast and a shared cheese course, with truffle appearing in every course.

Each dish will be paired with a carefully selected wine or drink, curated by Chris Masten from H&C Urban Winery and Fiasco Drinks alongside the Millbrook Winery team. Guests will be welcomed with a blanc de noirs before the pairings culminate with a 2024 Polperro Estate pinot noir served alongside the main course.
